Who knew there was a National Zucchini Bread Day? Well it’s TODAY! April 25th! Zucchini is a classic summer veggie, so what better way to get your taste buds ready for the summer harvest than with these mouth-watering zucchini bread recipes! Enjoy!
Zucchini Bread Recipe
2 cups fresh zucchini
3 eggs
2 cups flour
1 ¾ cups sugar
1 cup vegetable oil
¼ tsp baking powder
2 tsp baking soda
2 tsp cinnamon
2 tsp vanilla extract
1 tsp salt
1 cup chopped nuts (we recommend pecans or walnuts!)
- Preheat oven to 350 and grease 2 8.5”x4” loaf pans.
- Chop zucchini finely (or use vegetable peeler and shred it), then put into a colander to drain. Press zucchini firmly to drain extra water.
- Cream sugar and oil until well blended.
- Add eggs until just incorporated.
- Gently stir in remaining dry ingredients until fully incorporated.
- Add drained zucchini and mix well (be careful not to overmix, though).
- Pour mix into greased loaf pans.
- Bake for 55-60 minutes, or until toothpick inserted into center of bread comes out clean.
Zucchini Waffles
Love zucchini bread but want something a bit different? Try some zucchini waffles! Who knew veggies could be so tasty!?
1 cup fresh zucchini
2 eggs
1 cup flour
½ cup sugar
1 tsp vanilla extract
1/3 cup vegetable oil
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
½ tsp salt
½ cup raisins (optional)
½ cup nuts (optional)
- Add zucchini, eggs, sugar, vanilla, and oil to food processor and pulse until zucchini is finely chopped.
- Add all dry ingredients and pulse until batter is just mixed.
- Spoon batter onto greased hot waffle iron and bake 6-7 minutes.
