
I LOVE sandwich cookies.ย Whether filled with ice cream, icing, or anything else, I’ll always be on board for one of these goodies.ย (A favorite snack in my house is making a sandwich cookie with graham crackers and icing…quick, easy, and snack that pleases everyone!)
I decided I wanted to make some cookie sandwiches and came up with the idea of putting peanut butter cookies with a strawberry jam filling, to resemble my favorite type of peanut butter and jam sandwich!

PEANUT BUTTER & JAM SANDWICH COOKIES
{makes 24 cookies or 12 sandwich cookies}

Cookie Ingredients:
1 cup butter, softened
2 cups sugar (plus a little extra for rolling the cookies)
2 eggs
1 tsp salt
1 1/3 cup peanut butter
2 1/2 cups flour
2 tsp baking powder
Filling Ingredients:
6 tbl softened butter
2 cups powdered sugar
1-2 tbl milk
4 tbl strawberry jam
Directions:
1. I suggest starting with the filling, to allow it to refrigerate while the cookies are baking/cooling.
2. To make the filling, mix together the butter and powdered sugar until incorporated. Add the milk to thin it out a bit, and then add the jam. Refrigerate.
3. To make the cookies, cream together the sugar and butter until fluffy.
4. Add the eggs and vanilla, followed by the peanut butter.
5. Once incorporated, add your dry ingredients and mix until just blended.
6. Shape dough into 1-2 inch balls and roll in sugar.
7. Bake on an ungreased baking sheet at 325 for 13 minutes.
8. Once cooled, frost one cookie with the filling, add another cookie on top, and you’re finished!

I am planning to do these up with Nutella in the center; and maybe a saltier, less sweet alteration to the cookie recipe, to offset the sweetness of the Nutella. LOVE mixing Nutella and peanut butter for Graham Cracker sandwiches, so I’d been looking for a peanut butter cookie that presents like your picture!
I used blackberry jam instead, and they look delish! Thanks for the frosting idea ๐
