Happy Thanksgiving Week! It may be just me, but the holidays really seem to have snuck up on us this year. Were you assigned to bring a dessert to your Thanksgiving gathering and still haven’t a clue what to bring? Perhaps you don’t know where you’ll find the time to whip together a homemade pie but don’t really want to succumb to the picked over store-bought desserts either. This holiday is, after all, all about the homemade desserts! Okay, maybe it’s about the turkey. We’ll just call it a tie.
This is a no fuss recipe is for four individual apple crisps but could easily be doubled or even tripled. It comes together pretty quickly prior to baking, but the best part is–no labor-intesive pie crust to make!
Individual Apple Crisps
Ingredients:
- 1/2 c. all-purpose flour
- 3 Tbsp. finely chopped pecans or walnuts
- 4 Tbsp. sugar, divided
- 2 Tbsp. packed dark brown sugar
- 1/4 tsp. cinnamon
- 1/8 tsp. ground nutmeg
- Pinch of salt
- 4 Tbsp. unsalted butter, melted
- 3 large tart and crisp apples
- 2 tsp. lemon juice
Preparation:
1. Preheat oven to 400*.
2. Peel the apples and cut into 1″ chunks, eliminating the cores. Immediately mix with lemon juice in a medium bowl. Add 2 Tbsp. sugar + mix until apples are coated. Set aside.
3. Topping: In another medium bowl, whisk together flour, nuts, 2 Tbsp. sugar, brown sugar, cinnamon, nutmeg and salt. Add melted butter and stir until combined and crumbly.
4. Put the ramekins on a baking sheet.
5. Divide apple chunks evenly between 4 mid-size ramekins.
6. With a spoon, top each with equal amounts of the topping mixture.
7. Place the baking sheet with the ramekins in the oven and bake for 30-35 minutes until topping is browned and apples are soft.
These can be served with ice cream frozen yogurt or whipped topping, but are great by themselves also.
